While I was a youngster in Delhi, just after India’s partition, refugees from the Punjab opened the first tandoori restaurant there. They offered tandoori chicken and naan (slightly raised flatbreads), which thrilled us all, but they also served this Butter Chicken. They just took freshly cooked tandoori chicken, cut it into smaller sections, and then smothered it in a tomato-cream sauce to which they also added butter at the very end. It was rich and glorious. Here is my Instant Pot version of the same dish.
